Cada año surgen nuevos restaurantes en nuestra capital, algunos son puro postureo, vas simplemente para hacerte la foto de turno y subirla a Instagram, pero hay otros en los que realmente merece la pena quedarse e incluso repetir, porque el sitio lo vale y la comida es espectacular.
Slow food es un movimiento internacional que nace en Italia, promueve una forma de comer sana , con uso de productos naturales, ecológicos, y trata de salvaguardar las tradiciones gastronómicas regionales, con sus productos y métodos de cultivo.
Mi último gran descubrimiento con esta filosofía slow food ha sido el restaurante Fismuler, en la calle Sagasta de Madrid. En sus fogones se encuentra Nino Reduello, el mismo de Las Tortillas de Gabino, La Gabinoteca y Tatel, otro de los must de hace un par de años.
Every year new restaurants emerge in our capital, Madrid, some of them you just go to take a photo and upload it to Instagram, but there are others that really worth going to eat because the food is spectacular.
Slow food is an organization that was founded in Italy and promotes local food and traditional cooking. Promoted as an alternative to fast food, it strives to preserve traditional and regional cuisine and encourages farming of plants, seeds, and livestock characteristic of the local ecosystem.
My last great discovery slow food has been the Fismuler restaurant, on Sagasta street in Madrid, in its kitchen is Nino Reduello, the same chef of the restaurants Las Tortillas de Gabino, La Gabinoteca and Tatel.

Su carta va cambiando en función de los productos de mercado, a nosotros nos preparó un menú para compartir especial, con su mítica tortilla de ortiguillas, erizo del cantábrico, una ensalada riquísima con higos, steak tartare, ventresca de atún...y de postre su archiconocida tarta de queso, y una torrija espectacular, nada que ver a ninguna otra que hubiera probado antes.
The menu is changing depending on the market products, they prepared an special menu, with its mythical special omelette, a delicious salad with figs, steak tartare, tuna belly ... and dessert its well-known cheese cake, and a spectacular "torrija" (a typical Spanish dessert).
Y como curiosidad, contaros que si vais en grupo tenéis que intentar reservar la conocida como "mesa Instagram", situada en un patio interior con mucho encanto...
